Tonight, I wanted pizza. I didn't buy pizza crust at the grocery store, because it was so expensive. I knew that I had to make the dough from scratch. Instead of the normal dough I wanted to try sweet potato crust with a variation of toppings.
Sweet Potato Crust
2 1/2 cups of flour (unbleached flour will work well)
2 tsp baking powder
dash of kosher salt
2 cups of mashed sweet potatoes
2 tablespoons of olive oil
dash of honey
dash of cayenne pepper (optional)
Pre heat oven to 425 and cook crust 10 minutes.
Toppings
On one pizza I added garlic and olive oil for the "sauce", caramalized onions, parmasean, and mozzerella.
After applying toppings cook an additional 10-12 minutes.
This was by far my favorite!!
The second pizza I added sliced zucchini, portebello mushrooms, and bell pepper with a basil pesto sauce. Add mozzerella and parmasean and cook for an addtional 12-16 minutes.
For the pesto sauce definitely go with 2cups of fresh basil, crushed walnuts, fresh garlic, and olive oil. Use as much or as little as you like.
